What the?

Masa – Means “Dough”. Masa Harina is the dehydrated corn flour for making masa dough. Masa is used for making tortillas, huaraches, empanadas, sopes, tostadas,molotes and tamales.
Poblano-Large Green chile, much like a capsicum but a darker green colour.
Pasilla-A large long dried chile. Chiles a traditionally dried on the bush. Many chiles have two different names depending on whether they are fresh or dried. Poblano chiles are known as ancho chiles when dried?!
Cuitlacoche -Corn fungus that is considered a delicacy of the rainy season, Spores attack the corn and mutate the kernels, causing them to enlarge and burst open the green husks that normally enclose them.
Mole- A traditional sauce made with a 1000 different ingredients, but the two standouts are chile and chocolate! Traditionally made for fiestas only, mole is brings together the village cooks (the women), where with combined forces they produce a divine and delicate sauce!
